Recipe: Banana Cake





INGREDIENTS

- 3 over ripe bananas (two is also fine; three just intensifies the flavour)

- 3 eggs

- 170g of caster sugar

- 170g of self raising flour

- 170g of margarine (room temperature)

- Vanilla essence


METHOD

- Preheat the oven to 160C/ 320F (Gas Mark 3)

- Cream the sugar into the margarine

- Add in the flour

- Add in the three eggs

- Mash in the bananas into the mix

- Once everything is well combined, pour mixture into loaf tin

- Bake for 50 mins to an hour

- Stick a toothpik or knife in your cake to see if it is done. If your toothpik or knife comes out clean, your cake is done.

- Leave to cool on a cooling tray before attempting to turn out of loaf tray
