Recipe: Lasagna

I heard that lasagna is hard to make. Not anymore. I've got you. Follow this recipe and you'll be amazed at how easy and delicious this is. No more store bought lasagna after this :)


INGREDIENTS:

- 1 lb mice beef

- 2 medium onions (diced)

- 5 cloves of garlic

- 5 tbs of olive oil

- 1/2 tsp salt

- 1/4 black pepper

- 1/4 dried thyme

- 1 1/2 granulated sugar

- 2 tbs parsely

- 1 tsp hot chilli flakes

- 400ml tinned tomatoes

- 16 oz low fat cottage cheese

- 15 oz reduced fat ricotta cheese

- 1 large egg

- 4 cups of shredded mozzarella

- Ready to use lasagna sheets


METHOD:

There are three stages to making this lasagna- the marinara stage, the cheesy stage and the staging stage. Let's start with the marinara stage:

- In a heavy bottom frying pan sauté one onion in 4 tbs of olive oil

- Once the onions starts to thin, add in 3 cloves of crushed garlic

- Add 1tsp of flaked chillis and fry of 1 minute

- Add tinned tomatoes

- Add 1 tsp of sugar

- This is the marinara sauce that you will be using. Taste and add seasoning as required and leave aside

- Fry the other onion using 1 tbsp of olive oil

- Add two crushed garlic cloves to the pan and fry

- Add in the minced beef

- Add the salt, pepper, thyme, remaining sugar and 1tbs parsley to the mix

- Continue cooking until the beef browns

- Add in the marinara sauce

- Taste and add seasoning

- Set the beef marinara mixture aside and prep the cheese mixture. Preheat oven at this stage to 180C/fan/160C/gas 4

- In a mixing bowl add in the cottage cheese, ricotta cheese, mozzarella cheese and 1tbsp of parsley

- Crack 1 large egg into the cheese mixture; this will help the three cheeses to combine better

- In a casserole dish, start layering up. Initially start with a tbsp of the marinara mix, place the lasagna sheets and then add the cheese mix. Repeat until the lasagna has as many layers as you wish.

- Stick toothpicks into the top layer of the lasagna and cover the whole thing with foil paper.

- Place lasagna into the oven and let cook for 40-50 mins. Once the cheese on top starts to brown, your lasagna is done.

- Enjoy with some garlic bread. Delicious!!
