Recipe: Okra Curry

Call it Okra or Ladies' Fingers, this vegetable is one for the taste buds...

INGREDIENTS:
- 2 tbsp olive oil
- 1 tsp cumin seeds
- 1 onion sliced
- 3 tomatos (diced)
- 300g of okra (cut to one inch pieces)
- 1 tsp of salt
- 1 tsp of coriander power
- 1 tsp of chilli powder
- 1 tsp of turmeric power
- Juice of half lemon
- handful of coriander leaves
- 1 green chilli cut
METHOD:
- In a pan, fry the cumin seeds in olive oil
- Add in the onions and fry until they start thinning
- Add in the diced tomato
- Add in the salt, coriander powder, chilli powder and turmeric powder
- Once the tomatoes have soften, add in the okra
- Cover the pan and cook for 7 mins
- Add in the lemon juice, coriander leaves and the chilli
- Cook for a further 3 mins and you're done. Happy eating :)
