Recipe: Smoked salmon omelette

Easy and quick to make but looks and tastes like a treat.

INGREDIENTS:

1 medium egg

1 piece of smoked salmon

1 tablespoon of chopped chives

1.5 tablespoons of crème fraîche


METHOD

- Whisk one medium egg

- tear up salmon so they become flaky and add it into the egg

- add in chives to the egg (as much or as little as you wish)

- in a frying pan, spray on some frying oil and when it's heated up pour in the egg mixture and rotate the pan so that the egg covers the bottom side of pan

- once egg has cooked, use a spatula and go around the circumference of egg. This will help separate the egg from the pan.

- fold in one side of the egg, ensuring it only overs 1/3 of the omelette

- spread half of the crème fraîche on the egg fold and then fold again

- spread the rest of the crème fraîche and fold the egg for the final time.

- enjoy with slices of bagel.
